How long can fresh corn be stored in refrigeration

Fresh corn can generally be stored in refrigeration for 3-5 days, and the actual storage time is affected by factors such as corn maturity, refrigeration temperature, humidity, packaging method, and whether it has been pre treated.

1. Corn Maturity

Immature tender corn has high sugar content and sufficient moisture. After refrigeration, it is easy to quickly consume nutrients due to respiration, resulting in a worse taste. The starch content of mature old corn increases, and the refrigeration storage time is relatively prolonged, but the sweetness will significantly decrease.

2. Refrigeration Temperature

When the temperature in the refrigerator compartment is maintained at 0-4 degrees Celsius, it can effectively inhibit microbial growth. If the temperature fluctuation exceeds 6 degrees Celsius, corn kernels are prone to frostbite or mold growth, manifested as surface depressions or black spots.

3. Humidity control

Wrap corn with cling film to retain 2-3 layers of outer leaves, which can maintain a suitable humidity of about 85%. Excessive drying can cause corn kernels to shrink, while high humidity can easily breed pathogenic microorganisms such as gray chain fungus.

4. Packaging Method

Vacuum packaging can isolate oxygen and extend the shelf life to about 7 days, while ordinary plastic bag packaging needs to leave ventilation holes. Corn with bracts is more resistant to storage than corn with husks, as bracts can reduce water evaporation and mechanical damage.

5. Pre treatment method

Corn that has been blanched and frozen can be stored for more than 2 months, but cleaning before refrigeration will damage the surface protective layer. It is recommended to remove the stems of untreated whole ear corn to prevent nutrient loss when directly refrigerated.

If long-term storage is required, it is recommended to remove the bracts and silk, blanch in boiling water for 3 minutes, drain the water, and pack and freeze. If yellow bracts or moldy corn ears are found during refrigeration, they should be discarded immediately. Before consumption, observe whether the corn kernels are full and shiny. If there is no juice leakage when pressed, it indicates that they are still fresh. When stewing with ingredients such as carrots and pork ribs, it is recommended to use refrigerated corn as early as possible to ensure a fresh and sweet taste.
