How do cookies become crispy when they become trendy

Cookies that have become damp can be restored to their crispness by heating them in an oven, microwave, pan, freeze-drying, or by placing them with desiccants. Moisture affected cookies soften their texture by absorbing moisture from the air, but can be effectively removed through appropriate heating or dehumidification treatment.

1. Oven Heating

Spread damp cookies flat on a baking tray and bake in a preheated oven at 150 degrees Celsius for about 5 minutes. The heat of the oven can evenly evaporate the moisture inside the cookies, while avoiding high temperatures that can cause burning. After baking, it needs to be thoroughly cooled and sealed for storage to prevent secondary moisture. This method is suitable for processing a large number of cookies simultaneously and can maintain the original flavor well.

2. Microwave Heating

Spread 3-4 cookies flat on a microwave tray, heat on medium heat for 20 seconds, and then check for crispness. Microwave heating can quickly vaporize water, but attention should be paid to short-term operation in stages to avoid local overheating and hardening. After heating, it can be left for a moment to allow the residual heat to continue evaporating residual moisture, suitable for quick processing of small amounts of cookies.

3. Baking in a flat bottomed pan

Use a non stick pan to preheat over low heat, then add cookies and bake on both sides for 1 minute. The heat conduction of the pot can evenly heat the cookies, and chopsticks can be used to flip them during the process to ensure double-sided dehydration. This method does not require specialized equipment, but requires full monitoring to prevent burning, making it suitable for emergency handling of small amounts of biscuits at home.

4. Freeze drying

Seal the cookies and place them in the freezer for 12 hours. The low temperature environment can cause moisture to condense into ice crystals. After removal, let it thaw naturally at room temperature, and the ice crystals will sublime and vaporize directly to remove moisture. Although this method takes a long time, it can maximize the preservation of the original taste of cookies, especially suitable for cookies containing easily melting ingredients such as chocolate.

5. Place desiccants together.

Lay food grade desiccants or rice grains that have not been dampened on the bottom of a sealed container, and store the biscuits in a sealed container for 24 hours. Desiccants can actively absorb moisture in the environment, gradually restoring the crispness of cookies. This method does not require heating and is suitable for temperature sensitive special recipe cookies, but it is necessary to ensure that the desiccant does not come into direct contact with the food.

It is recommended to use a double-layer sealed jar for daily storage of cookies, with a food deoxidizer placed inside and avoiding frequent opening and closing. When the environmental humidity is high, it can be divided into small portions and frozen for storage, and warmed up as needed before consumption. Choosing a cookie recipe with a higher sugar content can slow down the rate of moisture absorption, while adding moisture absorbing ingredients such as nuts requires stricter moisture resistance. If the cookies have developed a noticeable rancid or moldy taste, it is not recommended to consume them again.
