How can durian ripen when it's raw

Durian ripening can be processed through natural ripening, high-temperature ripening, or fruit ripening. Immature durian fruit flesh is hard and has a bitter taste, and requires appropriate processing to reach its optimal edible state.

1. Natural ripening

Place durian in a cool and ventilated place, avoiding direct sunlight. It usually takes 2-4 days for it to ripen naturally. When durian is ripe, it emits a strong aroma, and the cracks in the fruit shell increase. Lightly pressing the fruit spines gives it a slight elasticity. This method is suitable for durians whose shells have started to crack, and daily inspections are necessary to avoid overcooking and rotting during the process.

2. High temperature ripening

Wrap durian with newspaper or cotton cloth and place it in an environment of 25-30 ℃ to accelerate the release of ethylene gas. Durian can also be stored together with rice and grains, utilizing the insulation properties of grains to increase local temperature. It takes about 1-2 days to mature in a high temperature environment, but it should be noted that temperatures exceeding 35 ℃ may cause the flesh to spoil.

3. Fruit ripening

Put durian, apples, bananas and other fruits with high ethylene release into sealed bags. Ethylene will promote the conversion of durian starch into sugar. It is recommended to open the bag for ventilation every 8 hours to prevent the growth of mold due to high humidity. This method takes about 24-48 hours, and the mature durian should be consumed as soon as possible.

4. Cooking treatment

Immature durian fruit flesh can be sliced, baked, or fried. High temperature can cause starch saccharification and improve taste. It is recommended to heat at 150 ℃ for 15 minutes during baking, and quickly fry at 170 ℃ until the surface turns golden brown during frying. Although it loses its raw flavor after cooking, it can be used to make desserts such as durian pastries and durian cakes.

5. Judgment criteria

There is a concave feeling when pressed on the handle of mature durian fruit, and there is a shaking sound of the flesh when shaken. Forcefully opening the shell of immature durian can cause the flesh to harden. If it is found to be unripe after opening the shell, wrap the flesh with plastic wrap to continue ripening. Avoid refrigerating unripe durians, as low temperatures can terminate the ripening process.

When purchasing durian, you can choose fruits with yellow green shells and slight cracks, which make maturity easier to control. If the fruit shell turns black and has an alcohol smell during the ripening process, it has already rotted and needs to be discarded. Mature durian is recommended to be refrigerated and consumed within 3 days, while the flesh can be frozen for one month. Before consumption, the fruit pulp can be left at room temperature to warm up for better flavor. Special people should pay attention to the high sugar content of durian, and diabetes patients should control their intake.
