Frozen dumplings in cold water or hot water

It is recommended to put frozen dumplings in hot water, but the water temperature should be adjusted according to the type of dumpling filling. Meat filled dumplings are suitable for boiling water, while vegetarian filled dumplings can be cooled to around 80 degrees Celsius.

Hot water can quickly solidify the protein on the surface of dumpling skins, preventing skin breakage and adhesion, especially suitable for dumplings with high moisture content on the outer skin after freezing. Boiling water can quickly shape dumplings, reduce starch leaching, and maintain their intact appearance. Meat filling requires longer heating time, and high temperature can ensure that the center temperature meets the standard, avoiding undercooking. Vegetable filled ingredients such as chives and eggs are easy to cook, and a slightly lower water temperature can prevent them from being cooked to perfection, preserving a crispy and tender texture.

Putting cold water in the pot may cause excessive water absorption and softening of dumpling skins, increasing the probability of skin breakage. Frozen dumplings thaw slowly in cold water, and the large amount of starch dissolved can make the soup cloudy, affecting the taste. However, some thick skinned handmade dumplings or specific cooking methods may use the cold water slow cooking method, gradually heating up to ensure even heating inside and outside. It is necessary to strictly control the heat to avoid sticking to the pot.

When cooking frozen dumplings, the water should be sufficient. After the water surface boils, gently push it to prevent it from sinking to the bottom. Meat filled dumplings can be cooked with cold water once to help the filling cook through, while vegetarian filled dumplings can be boiled directly until they float up. Paired with dipping sauces such as vinegar and garlic paste, it can promote digestion. For those with weak gastrointestinal function, it is recommended to control the amount consumed.
