Do crabs need to be washed before steaming

Crabs need to be washed before steaming to remove sediment, bacteria, and harmful substances from their surface. The main cleaning methods include brushing the outer shell, soaking and spitting sand, cutting off the gills, removing the gastric sac, and rinsing the abdomen. During the growth and transportation of crabs, their shells are prone to adhere to sediment, algae, and microorganisms. Direct steaming may affect their taste and hygiene. Use a soft bristled brush to carefully scrub the crab shell and crab foot joints, with a focus on cleaning the abdominal folds. Soak live crabs in diluted salt water to promote the expulsion of impurities from the body, and the time should not be too long. After cutting open the crab shell, remove the gray white gill leaves on both sides and use tweezers to pick out the stomach sac to avoid bitterness. Finally, thoroughly rinse the abdominal crevices with flowing water to ensure no residue. Some crabs with better aquaculture environments may have cleaner surfaces, but their gills and digestive organs may still harbor pollutants. If purchasing pre processed frozen crabs, it is necessary to check whether they have gone through a formal cleaning process. When cleaning, be careful not to get injured by crab claws. Use chopsticks to lightly touch the crab's eyes to put it into a state of suspended animation. Before steaming, it is recommended to marinate with ginger slices or cooking wine for further sterilization and deodorization.

When steaming crabs, it is recommended to use cold water in the pot, and after the water boils, timer to maintain even heat. Paired with ginger vinegar juice, it can neutralize coldness and be consumed in moderation by those with sensitive gastrointestinal tract. Dead crabs are prone to breeding histamine toxins, so it is important to ensure they are fresh before cooking. Overnight cooked crabs should be thoroughly heated. Avoid consuming with persimmons or strong tea to prevent gastrointestinal discomfort.
