Can undercooked rice still be cooked with water

Adding water to undercooked rice can be cooked, but the method and heat of adding water need to be adjusted according to the degree of undercooked rice and the type of pot. Jiasheng rice is usually caused by insufficient water or uneven heating, and attention should be paid to water control and flipping frequency during remediation. When cooking undercooked rice with water, if it is cooked in an electric rice cooker, a small amount of warm water can be evenly added and the cooking process can be restarted, using steam permeation to evenly heat the rice grains. It is advisable to cover the rice surface with just enough water, as too much can cause the rice to rot. Avoid frequent opening of the lid during the braising process to prevent heat loss. When using open flame cookware, turn down the heat and slowly pour hot water along the edge of the pot. Use chopsticks to poke holes in the rice to help with steam circulation, and use a spatula to gently flip from the bottom to prevent sticking. For the case of localized strangulation, the strangulation can be concentrated in the center of the pot, and after adding water, the area can be heated with emphasis. Some severely undercooked rice may be difficult to completely remedy with secondary water addition due to the solidified starch structure. The surface grains of this type of rice may absorb too much water and become soft and rotten, while there is still a hard core inside. Especially when using aged rice or rice seeds with high amylose content, the effect of rebooking is more limited. At this time, it can be changed to Fried Rice or Congee processing, and the starch crystal structure can be destroyed by prolonging the high temperature contact time. Containers with strong heat storage properties such as cast iron pots have better rebooking effects than ordinary stainless steel pots, but strict control is required to prevent bottom coking.

When processing undercooked rice, warm water should be preferred over cold water, as excessive temperature differences can affect the water absorption efficiency of rice grains. The remediated rice should be consumed as soon as possible to avoid repeated heating that may cause a decrease in taste. It is recommended to soak rice in advance for daily cooking. The volume ratio of new rice to water should be controlled at around 1:1.2. When using an electric rice cooker, the precision cooking mode can be selected. If there is frequent occurrence of undercooked rice, it is necessary to check the sealing or heating uniformity of the cookware, and the differences in water absorption characteristics of different rice varieties should also be taken into consideration.
