Tofu can usually be eaten if it becomes sour after stir frying and does not spoil, but it is not recommended to continue eating if it is accompanied by an odor or texture change. The sour taste of tofu may be due to improper storage or differences in fermentation processes, and should be judged based on specific circumstances. Fresh tofu itself contains a small amount of lactic acid bacteria, and the slight sour taste may be a natural fermentation product. After being stir fried at high temperatures, the sour tofu that has not spoiled has been killed by lactic acid bacteria, and the acidic substances usually do not affect health. This type of tofu still maintains a tight texture, with no mucus or mold on the surface, and a uniform and soft sour taste without any unpleasant odor. You can try using seasonings such as ginger and garlic to neutralize the sour taste before consumption, or adding strong flavored seasonings such as spicy sauce to enhance the flavor. If tofu has a sour and pungent taste and a sticky texture, it may have fostered harmful microorganisms. This type of spoiled tofu is often accompanied by moldy spots or water seepage, with concentrated sour taste in certain areas and a putrid odor. After consumption, it may cause gastrointestinal discomfort, such as abdominal pain and diarrhea. Especially in high temperature environments during summer, the rate of tofu protein spoilage accelerates, and even if refrigerated for more than three days, it is prone to spoilage. When purchasing tofu in daily life, attention should be paid to refrigeration and consumption within two days. Before cooking, soak it in water for ten minutes to observe whether it emits any odor. Traditional brine tofu is more prone to natural sour taste than lactone tofu, and some sour substances can be removed by quickly blanching.
