It is usually not recommended to consume vegetables with slight decay, but vegetables with localized decay can be consumed after removing the spoiled parts. Vegetable rot may be caused by microbial contamination, oxidation reactions, improper storage, and other factors. Rotting parts may produce mycotoxins or pathogenic bacteria. When small areas of vegetable decay occur locally, the decayed area and surrounding healthy tissue of more than two centimeters can be completely removed, and the remaining part should be thoroughly cleaned and cooked at high temperature. Root vegetables such as carrots and potatoes have a dense tissue structure and slow decay and spread, so they can be safely consumed after appropriate treatment. Due to their high moisture content and loose structure, leafy vegetables are prone to fungal toxins spreading throughout the entire plant after decay, and there is still a risk even if the spoiled parts are removed. Vegetables should be discarded when they have large areas of decay, mold, or odor. Moldy vegetables may contain heat-resistant toxins such as penicillin, which cannot be destroyed by conventional cooking. Some rotten vegetables may have Salmonella or Listeria attached to their surface, which may cause food poisoning in immunocompromised individuals after consumption. Vegetables that have been stored for too long, even if they appear intact, have lost a significant amount of their internal nutrients.

Daily storage of vegetables should pay attention to classification and storage. Leafy vegetables should be wrapped in absorbent paper and refrigerated, while root and stem vegetables should be stored in a cool and ventilated place. When purchasing, choose fresh and intact vegetables to avoid buying too many at once. When dealing with rotten vegetables, it is necessary to thoroughly disinfect the knives and cutting boards to prevent cross contamination. Special populations such as pregnant women, infants, and chronic disease patients should strictly avoid consuming any rotten vegetables and prioritize choosing fresh seasonal ingredients.
