Can the raw rice be used for Fried Rice

Mixed rice can be used for Fried Rice, but the taste, digestion and absorption will be affected. Jiasheng rice usually refers to rice that is not fully cooked and still has a hard core inside. Directly frying it may cause the finished product to become dry, hard, or sticky. If the rice is only slightly undercooked, it can be improved by extending the frying time or adding a small amount of water; If the undercooking is severe, it is recommended to steam it again before use.

Slightly undercooked rice is stir fried at high temperatures, and the water evaporates further, making the rice grains more chewy and suitable for people who prefer a harder texture. When stir frying, you can first beat the rice and continue to stir fry over medium heat until the rice grains are loose. Add ingredients such as eggs and vegetables halfway to help disperse the heat. Part of the starch gelatinizes during the secondary heating process, which can compensate for the partially undercooked texture, but there is a significant loss of thermosensitive nutrients such as vitamin B1. The center temperature of severely undercooked rice is difficult to reach the temperature required for gelatinization, and direct frying can cause external scorching and internal growth, which may cause gastrointestinal discomfort after consumption. This type of rice should be steamed back in the pot for 10 minutes or heated in the microwave until the rice core becomes soft before stir frying. Repeated heating of rice increases the content of resistant starch, which helps control blood sugar, but those with weaker digestive function may experience bloating.

It is recommended to use cooked rice that is refrigerated overnight for Fried Rice, whose moisture distribution is even and easier to fry. When reusing undercooked rice, it is necessary to ensure thorough heating and avoid consuming undercooked rice grains. Pairing vegetables rich in vitamin C, such as green peppers and peas, can reduce the risk of nitrite. Gastrointestinal hypersensitive persons and children should avoid eating Fried Rice made of sandwiched rice.
