Can the cooked fungus be eaten overnight

After cooking the fungus, it should be consumed overnight with caution. If stored properly in refrigeration and not spoiled, it can usually be consumed, but if stored for more than 24 hours or stored improperly, it is not recommended to consume.

Auricularia auricula is rich in protein and polysaccharides. If it is refrigerated at a temperature below 4 ℃ after cooking, the growth rate of microorganisms will be slower. It can still be safely consumed after being reheated thoroughly within 12 hours. It is necessary to ensure sealed storage to avoid cross contamination, and boil for more than 3 minutes before consuming again to kill potential bacteria. Overnight black fungus may have a harder texture and some water-soluble vitamins may be lost, but dietary fiber and minerals are still retained. People with gastrointestinal sensitivity may experience bloating, it is recommended to try a small amount. In high temperature or humid environments during summer, even if refrigerated, mold growth may occur due to condensation water, resulting in the appearance of mucus and odors that must be discarded. Cold mixed black fungus is more prone to bacterial growth, it is recommended to eat it as a meal. If the soaked fungus is not fully cooked and directly refrigerated, the nitrite content may increase overnight, increasing health risks. Elderly people and immunocompromised individuals should avoid consuming overnight black fungus to prevent the onset of gastroenteritis.

Daily recommendation is to cook and eat the fungus according to the amount consumed. The remaining fungus should be drained of water and sealed in a fresh-keeping box for refrigeration. Before consumption, observe for any signs of spoilage such as stickiness or discoloration. Pairing with antibacterial seasonings such as ginger and garlic can reduce the risk, but any abnormal taste or odor should be discontinued. Long term dependence on overnight dishes may affect the balance of nutrient intake, and priority should be given to ensuring the freshness of ingredients.
