Whether rice can be eaten overnight depends on storage conditions. Rice that is refrigerated and has no obvious odor or deterioration can be heated and consumed. Rice that has been stored at room temperature for more than 4 hours is not recommended for consumption. Rice spoilage may be caused by factors such as bacterial growth, starch aging, and water loss. After leaving rice at room temperature for more than 4 hours, microorganisms such as Bacillus cereus may proliferate and produce heat-resistant toxins, which cannot be completely eliminated even with high temperature heating. This type of spoiled rice may cause gastrointestinal discomfort symptoms such as nausea, vomiting, or diarrhea after consumption. The bacterial growth rate slows down in a refrigerated environment, but the taste and nutritional value of rice stored for more than 24 hours will significantly decrease, and starch retrogradation will lead to a decrease in digestion and absorption rate.

In hot and humid environments during summer or when rice is not sealed and stored, even if refrigerated, mold spots or a sour taste may appear due to mold growth. If the surface of overnight rice becomes sticky, yellow in color, or emits a strange odor, it should be discarded immediately to avoid food poisoning. When reheating refrigerated rice, ensure that the center temperature reaches 75 degrees Celsius or above and avoid repeated heating.

It is recommended to pack the remaining rice while it is hot and refrigerate it in a sealed container for no more than 24 hours. Heat thoroughly until steaming before consumption, and pair with fresh dishes to reduce nutrient loss. People with weak gastrointestinal function, pregnant women, and children should try to avoid consuming overnight rice as much as possible, and prioritize freshly cooked food to ensure food safety and nutrient intake.
