Can peanuts still be eaten next year

If peanuts are stored properly and not moldy in the following year, they can generally be consumed, but the quality should be carefully checked. Peanuts are prone to moisture and mold, producing aflatoxins. It is recommended to observe their appearance, odor, and try a small amount before consumption.

Peanuts stored well for the next year usually have a uniform color, intact outer shell, and a normal oil aroma. After being opened, the kernels appear milky white or light yellow. This type of peanut has been fully dried, sealed and stored against moisture, and has not been damaged by insects or mold. Although there is a slight loss of nutrients, it can still be safely consumed. It is recommended to soak and rinse with water before cooking. High temperature stir frying or steaming can further reduce the risk. If peanuts show mold spots, blackening, wrinkling and deformation, or emit odors such as crackling and moldy, it indicates that they may have gone bad. Damp peanuts are prone to the growth of Aspergillus flavus, whose toxins are heat-resistant and may cause cancer. Even if the moldy parts are removed, it is not recommended to consume them. If some peanuts with intact surfaces taste bitter, they should be immediately stopped from consumption.

Daily storage of peanuts should be kept dry and ventilated, and can be sealed and stored in the refrigerator for refrigeration. It is recommended to prioritize consuming fresh peanuts of the current season, and to purchase peanuts in small quantities the following year and consume them as soon as possible.
