Mushrooms can be stored in the refrigerator, but attention should be paid to the storage method and time. Fresh mushrooms can delay decay in low temperature environments, but high humidity or improper sealing can easily lead to spoilage. Fresh mushrooms contain a high amount of moisture. It is recommended to store them in breathable paper bags or freshness boxes during refrigeration to avoid direct contact with the inner walls of the refrigerator. Temperature control at 2-4 degrees Celsius can store for 3-5 days, and some varieties such as shiitake mushrooms and shiitake mushrooms have strong storage resistance. Before refrigeration, there is no need to clean. The surface soil can be lightly brushed with a soft brush. A damp environment can accelerate the blackening or stickiness of bacterial folds. Some special varieties such as matsutake and boletus are susceptible to low-temperature damage to their flavor compounds, which may result in lignification or loss of aroma after short-term refrigeration. When storing mushrooms on a daily basis, it is necessary to regularly check their condition and avoid mixing them with other strongly scented foods. Cleaning before cooking can reduce residual moisture, while blanching or quick stir frying can better maintain the taste. If long-term storage is required, mushrooms can be sliced and dried or frozen, but frozen mushrooms are more suitable for stewing dishes.
