Can expired olive oil still be consumed

It is generally not recommended to continue consuming olive oil after it has expired, as there may be a risk of oxidation and deterioration. The shelf life of olive oil is generally 18-24 months, and it is recommended to use it within 3-6 months after opening. Olive oil is prone to oxidation reactions after expiration, producing free fatty acids and peroxides. These substances can cause oil to become rancid, resulting in a rancid or bitter taste. The nutritional value of oxidized olive oil is significantly reduced, and vitamin E and polyphenol antioxidants will gradually be lost. Long term storage of olive oil may also breed mold and produce harmful substances such as aflatoxins. Daily storage of olive oil should avoid direct sunlight and high temperature environments, and seal it promptly after use. It is recommended to choose dark glass bottle packaging when purchasing, and label the date after opening for tracking freshness. If any odor, viscosity or abnormal taste is found in the oil, it should be immediately stopped from use. Reasonably controlling the purchase volume and prioritizing small packaging products can reduce waste.
