Dried mushrooms have a foul foot odor and are usually not recommended for consumption. This odor may be caused by improper storage leading to mold growth or bacterial growth, or it may be related to sulfur smoke residue. If dried mushrooms are damp or stored in a high humidity environment during the drying process, they are prone to the growth of mold and spoilage bacteria, producing a pungent odor similar to smelly feet. These spoiled mushrooms may contain harmful substances such as aflatoxin, which can cause gastrointestinal discomfort symptoms such as nausea, vomiting, and abdominal pain after consumption. Some merchants use sulfur fumigation to extend the shelf life. Excessive sulfur may generate sulfur dioxide when it comes into contact with water, producing a pungent odor and damaging respiratory mucosa. When purchasing, choose dry mushrooms with a fragrant aroma and dry texture. After opening, seal and refrigerate them and consume them as soon as possible. In rare cases, certain special mushrooms such as morel have a volatile sulfide odor similar to foot odor, but the odor disappears after sufficient soaking and high-temperature cooking. If the source of the odor cannot be determined, or if there is still a strong odor after soaking accompanied by mucus, discoloration, etc., it should be discarded immediately. It is recommended to use breathable cloth bags with desiccants for daily storage of dried mushrooms to avoid direct sunlight and high temperature environments.

Before consuming dried mushrooms, soak them in warm water for at least 30 minutes to thoroughly clean any impurities in the folds. When stewing, pair them with ginger slices, cooking wine, and other deodorizing ingredients. If symptoms of poisoning such as diarrhea and dizziness occur, seek medical attention in a timely manner. Special populations such as pregnant women, children, and immunocompromised individuals should be cautious when consuming wild mushrooms. It is recommended to purchase dried mushroom products with food safety certification through regular channels for daily use.
