Can apples be eaten if they are oxidized

Apples can generally be eaten after oxidation, but their taste and nutritional value may decrease. The oxidation of apples mainly occurs when polyphenolic substances in the flesh come into contact with air and undergo enzymatic browning reactions, without producing harmful substances. Apple oxidation is a common natural phenomenon in fruits. When cut or bitten apples are exposed to air, polyphenol oxidase in the flesh catalyzes the oxidation of polyphenols to form brown substances. This process does not produce toxic ingredients, but only causes partial loss of antioxidant substances such as vitamin C in apples. Oxidized apples may have a softer and lighter taste, but it will not affect the absorption of basic nutrients. For healthy individuals, consuming oxidized apples will not cause discomfort. If seeking better taste and nutrition, it is recommended to remove the oxidized portion or consume it as soon as possible.

Under special circumstances, caution should be exercised when consuming oxidized apples. Some people with weak gastrointestinal function may experience mild bloating or acid reflux when consuming severely oxidized apples, which may irritate the gastrointestinal mucosa. If there is mold or decay on the surface of apples at the same time, the oxidized parts may breed bacteria, and should be avoided from consumption at this time. Patients with diabetes should pay attention to the fact that the release rate of fructose after oxidation may be slightly accelerated, but the actual effect of glucose rise is small. Oxidized apples stored for too long may experience texture changes due to moisture loss, and it is recommended to judge based on their specific condition.

When consuming apples in daily life, oxidation can be delayed by soaking them in diluted salt water, covering them with plastic wrap, or dripping lemon juice. Choose fresh and hard apples, cut them open and consume them as soon as possible to maximize nutrient retention. If abnormal phenomena such as odor and stickiness are found in apple oxidation, it is not recommended to continue eating. Maintaining dietary diversity and consuming it together with other fresh fruits can help obtain more comprehensive nutrients.
