Proper refrigeration can inhibit bacterial growth, but prolonged soaking may lead to nutrient loss or decreased taste. After fully soaking fresh or dried kelp, it should be stored in the refrigerator for three days in a sealed container with stable temperature. Generally, it can remain edible. The refrigerated environment can slow down the growth of microorganisms, and the components such as alginate in kelp itself also have certain antibacterial effects. Attention should be paid to draining the water before refrigeration to avoid the accumulation of water inside the sealed bag accelerating spoilage. If a clean container is used and the water is changed regularly during foaming, the risk of deterioration can be further reduced.
