The internal structure of eggs will change over time, with fresh eggs having high egg whites and fixed yolk positions; However, aged eggs become loose due to the evaporation of water and protein breakdown, resulting in an enlarged air chamber and loose contents. The egg white of fresh eggs is divided into two layers: thick egg white and thin egg white. Thick egg white can effectively fix the position of the yolk. The proportion of thick egg white in newly laid eggs is high, and the yolk is suspended in the center of the egg white by a tie, so even if shaken vigorously, there will be no significant displacement. When the diameter of the egg chamber is usually less than 5 millimeters, the flowability of the contents is low, and it feels tight and noiseless when shaken. Eggs stored for more than two weeks have gradually become thinner due to the hydrolysis of egg white, resulting in a decrease in the elasticity of the yolk membrane and an expansion of the air chamber to over 10 millimeters. At this point, the yolk may detach from the frenulum and mix with the egg white to form a more fluid liquid. When shaking these types of eggs, a slight sound of water can be heard, and there are signs of content shaking on the hand. If the eggs show obvious shaking or odor, they may have spoiled and are not suitable for consumption.

When purchasing eggs, you can observe whether the eggshell is smooth and crack free, and if there is no shaking sensation when gently shaken, it indicates high freshness. When storing, it is recommended to place the eggs with the blunt end facing up in the refrigerator compartment and keep the temperature below 4 degrees Celsius to delay the hydrolysis of egg whites. Before cooking, eggs can be placed in water for testing. If they sink to the bottom and lie flat, they will be fresh. If they tilt or float, the freshness will decrease. Avoid purchasing too many eggs at once and try to consume them within two weeks after opening.
