Why don't you cover the pot when cooking noodles

The main reason for not covering the pot when cooking noodles is to prevent overflow and maintain the texture of the noodles. A large amount of starch foam will be produced during the boiling process of noodles, which is easy to overflow the soup due to capping; Simultaneously opening and cooking can allow the water to evaporate quickly, making the noodles more chewy. When noodles are boiled in boiling water, starch will continue to dissolve and form a viscous soup. If the lid is closed, the steam pressure in the pot will increase, and the starch foam will rapidly expand and overflow from the edge of the pot, which not only causes cleaning problems, but also may extinguish the flame of the gas stove, causing potential safety hazards. The steam can be freely distributed during open cooking, the pressure in the pot is stable, and the starch foam will gradually break and melt. When some special noodles, such as Italian noodles, need to be covered and stewed, a deep pot twice the diameter of the pot should be chosen, with the water level controlled at one-third of the pot body. After boiling, turn down the heat and leave a gap. However, Chinese hand-made noodles, Lamian Noodles noodles and other noodles that pursue a smooth and elastic taste will have a better effect without covering the pot. For dishes that require preserving the noodle soup, it can be briefly covered and simmered for half a minute after boiling, and then uncovered.

It is recommended to use a pot with a larger diameter when cooking noodles, and the amount of water should be at least three times the volume of the noodles. After the water boils, quickly disperse the strip with long chopsticks and keep it boiling on high heat for the first two minutes. When the color of the noodles becomes transparent and there is no white core at the edges, you can turn off the heat, and supercooling water can further enhance the texture. Cooking with green leafy vegetables can increase dietary fiber intake, but it is important to note that vegetables should be placed at the back to avoid excessive softening. People with weak gastrointestinal function can extend the cooking time appropriately or choose easily digestible fine noodle varieties.
