Why does lemon water taste bitter

Lemon variety is one of the key factors affecting bitterness, and some lemons themselves contain high concentrations of limonin, which is widely distributed in the peel and white inner membrane. If the selected lemon belongs to a variety with a strong bitterness, even if the flesh is removed, it may still release bitter substances after soaking. It is recommended to choose lemons with smooth skin and uniform color, as these varieties usually have a lighter bitterness. Improper handling during the brewing process can also lead to increased bitterness. If the seeds and white sponge layer are not completely removed when slicing lemon, prolonged soaking can cause bitter substances to dissolve into the water. Excessive water temperature or prolonged soaking time can also accelerate the release of bitterness. Brewing with water below 60 degrees Celsius and controlling the soaking time within 2 hours can reduce bitterness production. You can peel the lemon and use the flesh part, or quickly squeeze the juice instead of soaking it directly.

When drinking lemon water in daily life, it is recommended to choose fresh lemons and thoroughly remove the seeds and white parts, soak them in cold or warm water for a short time. If you are sensitive to bitterness, you can pair it with a small amount of mint leaves and honey to adjust the taste, and avoid drinking on an empty stomach to prevent gastrointestinal irritation. Note that lemon water should not be consumed excessively, 1-2 cups per day are recommended, as long-term excessive consumption may damage tooth enamel.
