Electric pressure cookers for cooking and sticking can be improved by adjusting the rice water ratio, soaking rice in advance, using anti stick coating inner liner, controlling cooking time, cleaning and maintaining the inner liner, and other methods.
1. Adjusting the rice water ratio
inappropriate rice water ratio is a common cause of sticking to the pot. When cooking glutinous rice, it is recommended to have a volume ratio of rice to water of 1:1.2, and for indica rice, it can be adjusted to 1:1.5. The water content of new rice is relatively high and needs to be appropriately reduced. Use a measuring cup for precise measurement to avoid adding water based on experience, which can cause excessive moisture and make the rice too soft and sticky to the bottom.
2. Soaking rice in advance
Soaking rice in advance for 20-30 minutes can allow starch particles to fully absorb water and expand, shortening cooking time. After soaking, the rice is heated more evenly, reducing the probability of local gelatinization. Note that the soaking time should not exceed 1 hour, otherwise it will cause the rice to taste too soft. In summer, it should be refrigerated and soaked to prevent spoilage.
3. Use anti sticking coating inner liner
Choose ceramic glaze or marble pattern anti sticking coating inner liner, whose surface microporous structure can effectively reduce food adhesion. Before use, a small amount of cooking oil can be applied to the bottom of the inner container to form an oil film. Avoid scratching the coating with a metal spatula. When cleaning, wait for the inner container to cool down and wipe it with a soft cloth. Regularly check if the coating has peeled off.
4. Control cooking time
The recommended high-pressure cooking time for regular white rice is 8-10 minutes, while for mixed grain rice it takes 12-15 minutes. Manual exhaust immediately after cooking may cause rapid evaporation of water due to sudden pressure changes. It is recommended to naturally lower the pressure for 5 minutes before opening the lid. The insulation function of continuous heating for more than 1 hour will cause the bottom layer of rice to dehydrate and harden, and the power should be cut off in a timely manner.
5. Clean and maintain the inner container
Thoroughly clean the inner container after each use, as food residue will form stubborn stains after carbonization. Stubborn sticking pots can be soaked in warm water and cleaned with a wooden shovel. Steel wire balls are prohibited. When not in use for a long time, the inner container should be kept dry. Before sealed storage, a thin layer of edible oil can be applied, and it should be washed again before use.
Choose rice with stable quality for daily use, as old rice is prone to breakage and increases the probability of sticking to the pot. Before cooking, check if the sealing ring is aging and leaking air. insufficient pressure can cause insufficient evaporation of water. Regularly clean the exhaust valve to prevent blockage and keep the heating plate at the bottom of the pot clean. If the sticking phenomenon persists, it may be a malfunction of the temperature control component. It is recommended to contact after-sales service for maintenance. Paired with a steaming rack, it can reduce direct contact between rice and the inner pot. When steaming miscellaneous grains, adding gauze can effectively prevent sticking.
