What kind of sweetness does kiwifruit have

Mature kiwifruit usually has a uniform skin color, a slightly soft texture, and is sweeter when it emits fruity aroma. Sweetness is influenced by variety, maturity, and storage conditions, and can be comprehensively judged by observing appearance, touch, and odor.

Yellow kiwifruit generally has a higher sweetness than green kiwifruit varieties, for example, the sugar content of golden kiwifruit can reach more than 15%. When ripe, the color around the fruit stem darkens, the skin turns from green to yellow or brown, and the fuzz is prone to shedding. Slightly soft but not excessively collapsed at both ends under light pressure is the best edible state. If it is too hard, it will be sour and astringent, and if it is too soft, it may ferment and lose its flavor. Immature kiwifruit can be sealed with apples and bananas to ripen, and ethylene gas can accelerate the conversion of starch into sugar. Some kiwifruit with scars on the surface may be sweeter due to concentrated nutrients during the growth period, but they are prone to spoilage due to extensive damage. Low temperature storage can inhibit post ripening. It is recommended to store at room temperature until it reaches the ideal state and then refrigerate. Diabetes patients need to control their intake, which should not exceed 200g per day, to avoid eating with high protein food affecting digestion.

When selecting, priority should be given to oval shaped fruits with no bruising on the skin, as kiwifruit grown organically has a purer sweetness. If the meat appears transparent or has an alcoholic taste after cutting, it is considered overcooked and not recommended for consumption. The fruit ripens faster during high temperatures in summer, and the ripening time should be extended for winter purchases. Special varieties such as red kiwi have a balanced sour and sweet taste, suitable for making jams or salads.
