The fastest way to ripen strawberries is to use ethylene gas or store them in a sealed container with other ripe fruits. The main methods for ripening strawberries include ethylene release method, temperature regulation method, fruit mixing method, paper bag wrapping method, alcohol spraying method, etc.

1. Ethylene Release Method
Place immature strawberries and fruits with high ethylene release, such as apples and bananas, into sealed bags. Ethylene, as a natural plant hormone, can accelerate the respiration of strawberries and enhance the activity of pectinase and cellulase. Typically, fruit softening and turning red can be observed within 12-24 hours. Attention should be paid to the possibility of overcooking and rotting if the sealing time is too long.
2. Temperature regulation method
Place strawberries in a warm environment of 20-25 degrees Celsius, and increasing the ambient temperature appropriately can promote enzyme activity inside the fruit. It can be placed on a windowsill that is not directly exposed to sunlight or in a warm place in the kitchen. Flip it every 3 hours to avoid local overheating, which can improve fruit hardness after about 6-8 hours. High temperature environment will accelerate water loss, and the processing time needs to be controlled.
3. Fruit Mixing Method
Mix strawberries with ripe fruits such as pears and kiwis in a breathable container. These fruits continuously release trace amounts of ethylene during the ripening process, which promotes the synthesis of anthocyanins in strawberry skin through gas contact. It takes about 18 hours to reach edible maturity. When mixing, clean gauze should be used to separate and prevent cross contamination.

4. Paper bag wrapping method
Wrap strawberries in a kraft paper bag and tie the bag tightly. The paper bag can maintain suitable humidity and accumulate ethylene released by the fruit itself. The increase in carbon dioxide concentration inside the bag will inhibit respiratory consumption, leading to faster accumulation of sugar. The conversion of sugar to acid ratio can be completed within 24 hours. It is recommended to open the bag and ventilate for 10 minutes every 6 hours to prevent mold growth.
5. Alcohol spraying method
Dilute Baijiu below 50 degrees with a ratio of 1:10 and spray gently on the surface of strawberries. Alcohol can damage surface cells, promote ethylene penetration, and inhibit mold growth. After processing, it is necessary to cover it with plastic wrap for 1 hour and then ventilate and let it dry. The obvious ripening effect can be seen after about 10 hours. This method is suitable for unripe strawberries with high hardness. Strawberries that have been ripened should be consumed as soon as possible to avoid nutrient loss due to prolonged storage. When making daily purchases, you can observe the color of the fruit stem. Strawberries that are bright green and have small hairs are fresher. When storing, it is recommended to keep the fruit stems and wrap them in kitchen paper. Placing them in the refrigerator can keep them fresh for 2-3 days. Rinse the surface with flowing water during cleaning, then soak in light salt water for 3 minutes to remove any residue. Strawberries are rich in vitamin C and anthocyanins, and moderate consumption can help with antioxidant properties. However, those with weak gastrointestinal function should not eat in large quantities on an empty stomach.
