Is the noodle cooking on high heat all the time

Cooking noodles does not require constant high heat. It is recommended to boil on high heat and then reduce the heat to medium low to maintain boiling. Boiling quickly over high heat can prevent noodles from sticking together, while boiling slowly over low to medium heat can prevent overflow and make the noodles more chewy.

When cooking noodles, first quickly boil the water over high heat. After the water boils, add the noodles and stir appropriately to prevent sticking to the bottom. After the starch on the surface of noodles is preliminarily gelatinized, turn it to the medium and low heat, and keep the water surface slightly boiling. Continuous high fire can cause rapid evaporation of water, which may result in a burnt pot or noodles that are soft on the outside but hard on the inside. Slow cooking over medium to low heat can evenly distribute heat and ensure consistent cooking of both the inside and outside of the noodles, especially suitable for types such as coarse noodles or pasta that require long cooking times.

In special circumstances such as cooking instant noodles or fine noodles, the time can be shortened by using medium high heat throughout the process, but close observation is necessary to prevent overflow. If using handmade noodles with high starch content, turn down the heat immediately after boiling on high heat to avoid cloudy soup affecting the taste. During the process of cooking noodles, a small amount of cold water can be added to cool down and enhance the elasticity of the noodles through temperature changes. However, frequent operation is not recommended to avoid prolonging the cooking time. When cooking noodles, the amount of water should be sufficient. It is recommended that the ratio of noodles to water be no less than 1:5 to avoid adding water temporarily during the cooking process, which may affect the taste. Adjust the heat according to the type of noodles. Fresh noodles are easier to cook than dry noodles, and the boiling time can be reduced appropriately. Timely supercooling after cooking can improve smoothness, but it is recommended for those with gastrointestinal sensitivity to consume directly to avoid irritation. Pairing vegetables with high-quality protein foods can enhance nutritional balance, such as broccoli, eggs, or lean meat slices.
