How to stir fry tofu for the best taste

Stir fried tofu should balance its tender and smooth texture with its fresh and fragrant taste. The key lies in pre-treatment, temperature control, and seasoning pairing.

1. Material selection and processing

Choose tofu with a tight texture or marinated tofu that is more resistant to stir frying. Soak the tofu in salt water for 10 minutes before cutting to remove the bean odor. After draining the water, cut it into 2cm square pieces. If you pursue a crispy texture on the outside and tender on the inside, you can fry the tofu cubes until both sides are golden brown before stir frying.

2. Heat Techniques

Use medium high heat to quickly stir fry throughout the process. The pot should be heated until it smokes before pouring oil. After adding tofu to the pot, do not immediately flip it over. Wait for the bottom to solidify before gently pushing it. Paired side dishes such as green and red peppers, black fungus, etc. need to be stir fried in advance until raw, and finally mixed with tofu and stir fried for 30 seconds before serving.

III. Seasoning combination

Basic seasoning: Mix half soy sauce and half oyster sauce to create a fresh flavor, and add a small amount of white sugar to enhance the freshness. Heavy flavors can be enhanced with Douban sauce or fermented black beans, while light flavors can be replaced with mushroom broth instead of water. Drizzle a little vinegar or Sichuan peppercorn oil on the edge of the pot before it is served to enhance the flavor level.

4. Ingredient pairing

For meat, choose thinly sliced pork belly or minced beef and stir fry to remove oil. For vegetarian dishes, pair with carrot slices and broccoli to enhance color. Mushrooms such as shiitake mushrooms and shiitake mushrooms can enhance freshness, while minced scallions, ginger, garlic, and dried chili peppers are essential spices.

Fifth, Innovative Method

Japanese methods can add miso and grilled fish broth, while Thai flavors require seasoning with fish sauce and lemon juice. Mapo tofu needs to fry the minced meat until crisp, then add Pixian bean paste and chili noodles to stir fry until red oil is obtained. Homemade tofu can be fried until the shell is peeled, and then baked with tomato sauce. After stir frying tofu, it is recommended to pair it with green leafy vegetables and mixed grain rice to ensure high-quality protein intake and supplement dietary fiber. Different cooking methods can be alternately selected, such as cold mixing, stewing, etc., to avoid nutrient loss caused by single cooking. Control oil consumption within 15 grams, hypertensive patients should reduce soy sauce consumption, and gout patients should pay attention to consuming no more than 100 grams of tofu per day. When storing leftovers, they must be refrigerated and consumed within 24 hours. When reheating, they must be thoroughly boiled.
