How long can mushrooms be stored at room temperature

Mushrooms can generally be stored for 1-2 days at room temperature, and the actual storage time is affected by temperature, humidity, freshness, packaging method, and environmental ventilation. Fresh shiitake mushrooms contain high moisture and are prone to microbial growth. After being stored at room temperature for more than 24 hours, they may become soft, sticky, or have a strange odor. In the hot and humid environment of summer, the spoilage rate is faster. It is recommended to consume it within 12 hours. If the harvested shiitake mushrooms are not cleaned and have some soil at the base of the stem, it may delay water loss, but there is still a risk of spoilage.

Some thick meat varieties such as shiitake mushrooms or mushrooms with a higher degree of drying may be stored at room temperature for 2-3 days due to their lower moisture content. But if the ambient temperature exceeds 25 degrees Celsius or the humidity is high, it will still accelerate mold growth. Observing whether the edge of the cap is curled inward and whether the gills have turned black are important indicators for judging freshness.

It is recommended to prioritize refrigerated storage or timely cooking. Mushrooms can be spread out on absorbent paper and stored briefly in a cool place. Mushrooms that have shown obvious discoloration or exudation should be discarded to avoid gastrointestinal discomfort caused by consuming spoiled ingredients. Long term storage can be done by drying or freezing, which can better preserve nutrition and flavor.
