How can a big bag of white sugar become soft when it's hard

The hardening of white sugar is usually caused by moisture evaporation leading to clumping, which can be restored to its loose state by sealing and heating or adding moisture absorbing ingredients.

Put the clumped white sugar together with the packaging bag into the microwave and heat it on low to medium heat for 10-15 seconds. The sugar crystals will re separate due to heating. When heating, it is necessary to closely observe to prevent the sugar from melting. After taking it out, gently rub it to restore the granular shape. If you don't have a microwave, you can lay the sugar bag flat on a radiator or in direct sunlight, and use continuous gentle heat to slowly break it apart. White sugar stored in a humid environment is prone to absorbing moisture and clumping. Fresh apples can be cut into pieces and sealed with hard sugar for 12 hours. The natural moisture released by apples can gently penetrate sugar cubes, while the sealed environment can balance humidity. Processed apples should be taken out in a timely manner to avoid rotting. This method is suitable for situations with slight clumping and not in a hurry to use.

It is recommended to use sealed cans and place desiccants for daily storage of white sugar to avoid contact with high temperature and high humidity environments. Regularly check the sealing of sugar cans, and purchasing small quantities multiple times can reduce the problem of clumping caused by long-term storage. If the white sugar has severely clumped and is accompanied by an odor, there may be a risk of spoilage, and it should be stopped from consumption.
