Boiling noodles usually does not require a lid. Covering the lid may cause excessive water temperature, overflow, or noodle sticking, but if quick boiling or maintaining water temperature is required, it can be covered for a short period of time.
When boiling noodles, add the noodles after the water boils. Opening the lid and cooking can allow the water to continue evaporating, avoiding a sudden rise in water temperature that can cause the noodles to be soft on the outside but hard on the inside. Without a lid, it is easy to observe the condition of the noodles, stir them in time to prevent sticking to the pot, and the cooked noodles have a more chewy texture. Noodles themselves are easy to cook, usually boil for 3-5 minutes after boiling, and opening the lid to cook can better control the heat. If the kitchen temperature is low or the firepower is small, you can briefly cover it before the water boils to accelerate the heating, and immediately remove the cover after the water boils. If cold water needs to be added to cool down during the cooking process, the lid should also be opened. For durable varieties such as coarse grain noodles, the cooking time can be appropriately extended, but it is still recommended to keep the lid open.
When cooking noodles, it is recommended to use a wide mouthed pot and add sufficient water, with the water surface height exceeding two fingers of the noodles. During the cooking process, gently stir the noodles with chopsticks to ensure even heating. After cooking, promptly remove the supercooled water to enhance the taste. If you like a soft and tender taste, you can extend the cooking time appropriately, but there is no need to cover it. Pay attention to the differences in ingredients among different brands of noodles, and adjust the cooking time for whole wheat or mixed grain noodles.
