The white mucus of jackfruit is a kind of plant gelatinous substance naturally secreted by the fruit, which contains pectin, polysaccharide and a small amount of protease. When fresh jackfruit is cut, the mucus will exude from the joint between the peel and pulp, which has a certain adhesiveness. This type of natural gum is often used as a traditional food additive in Southeast Asia, but direct consumption may cause numbness in the mouth or itching in the throat due to protease stimulation.
