Stir fried tofu can generally be consumed if stored properly overnight, but it needs to be refrigerated and not exceed 24 hours. Tofu is rich in protein and is prone to bacterial growth. It is not recommended to consume it if it has a sour taste, mucus, or color changes. Stir fried tofu is prone to spoilage when stored at room temperature for more than 2 hours, and refrigeration can delay bacterial growth. Store in a sealed container to avoid mixing with other foods. Before consumption again, it should be thoroughly heated to a center temperature exceeding 70 degrees Celsius to kill any potential pathogenic bacteria. People with weakened immunity, pregnant women, and infants should avoid consuming overnight tofu. If tofu is already nearing its expiration date or not fully cooked during cooking, there is a higher risk of spoilage after overnight. It is not recommended to store for more than 12 hours even if refrigerated in high temperature environments during summer.

Daily recommendation is to eat according to the amount consumed and avoid repeated heating. If preservation is required, fresh tofu can be directly frozen into frozen tofu to extend its shelf life. Reasonably combining vegetables and fruits to supplement vitamin C can help reduce the potential impact of nitrite. If discomfort symptoms such as abdominal pain and diarrhea occur, seek medical attention promptly.
