Bananas can be stored in the refrigerator during winter, but it may affect their taste and appearance. Bananas are tropical fruits, and storing them at low temperatures may cause the skin to turn black and the flesh to become soft, but it will not affect their safety for consumption. If you need to slow down the ripening speed, you can wrap the stems of immature bananas with plastic wrap and refrigerate them. The blackening of banana skin after refrigeration is an enzymatic browning phenomenon caused by low temperature, which is a normal reaction. The high humidity in the refrigerator may accelerate the formation of spots on the banana skin, but the flesh is usually not affected. If bananas are fully ripe, refrigeration can slow down excessive fermentation and is suitable for making milkshakes or baking. Short term refrigeration has a relatively small impact on nutrient loss, with higher retention rates of vitamin C and potassium elements. Immature green bananas should not be directly refrigerated, as low temperatures can inhibit the ripening process and prevent the flesh from softening properly. If long-term storage is required, it can be peeled, cut into pieces, and frozen for making ice cream or puree. Commercial banana transportation usually uses a temperature controlled environment of around 13 ℃, and the low temperature of 4-8 ℃ in household refrigerators is not the optimal storage condition. When the room temperature is low in winter, placing it in a ventilated and cool place is more conducive to maintaining flavor than refrigeration.

It is recommended to choose the storage method according to the consumption plan. For recent consumption, it can be stored in a cool and dark place. If the storage period needs to be extended, it can be refrigerated but consumed as soon as possible. Avoid placing bananas and fruits with high ethylene release, such as apples, together. Mature bananas can be peeled, packaged, and frozen as natural sweeteners. When storing, pay attention to checking whether the fruit handle is moldy. After refrigeration, leave it at room temperature for half an hour for better taste.
