Are eggs afraid of freezing? Put them in the car in winter

Eggs usually won't freeze in the car during winter, but long-term low temperatures may affect their taste. The egg shell has a protective effect, and short-term low temperature will not cause freezing cracking, but too low temperature may change the protein structure. The cold resistance of eggs is closely related to the storage environment. If the temperature inside the car is not lower than minus 2 degrees Celsius, eggs usually will not freeze. The surface of eggshells has a natural stratum corneum that can block some cold air from entering. The temperature fluctuation inside the car is relatively small in winter, and short-term storage will not have a significant impact. Eggs contain a certain amount of salt and protein inside, and their freezing point is slightly lower than that of pure water. Short periods of low temperature will not form ice crystals. If the temperature inside the car remains below minus 5 degrees Celsius, the egg yolk may gradually thicken and the viscosity of the egg white may increase. Eggs may suffer from frostbite in extreme low temperature environments. When the temperature remains below minus 10 degrees Celsius for a long time, the eggshell may develop subtle cracks. Freezing can cause the yolk membrane to rupture, resulting in a gelatinous texture after thawing. Proteins undergo denaturation during repeated freeze-thaw cycles, leading to a decrease in taste during cooking. Although the nutritional value of frozen eggs has not significantly decreased, there may be a slight loss of vitamin B groups. If frost is found on the surface of the eggshell or the egg liquid expands, it indicates that it has been damaged by low temperature.

It is recommended to store eggs in a cool and dry place during winter to avoid drastic temperature changes. If temporary storage is required in the car, insulation materials can be used to wrap it to reduce the impact of temperature differences. Frozen eggs can still be consumed, but they are more suitable for baking or frying than boiling in water. Pay attention to checking the integrity of the eggshell, and consume it as soon as cracks appear. Eggs can be paired with vegetables and fruits in daily diet to ensure a balanced intake of nutrients.
