Whether stir frying belongs to greasy food depends on the cooking method and oil consumption. Vegetables that are quickly stir fried with low oil or stewed in water and oil are usually not considered greasy foods, while dishes that are stir fried with high temperature and wide oil or repeatedly fried may contain more oil.
A stir fried dish made using a low oil fast frying method, where the oil mainly adheres to the surface of the ingredients. By controlling the oil temperature and frying speed, the oil absorption can be reduced. Green leafy vegetables such as broccoli and oil lettuce have low fat content. After stir frying for a short period of time and draining the oil, the oil content per hundred grams of the finished product is similar to that of steaming. Water oil braising and stir frying use a small amount of oil and steam to heat together, reducing the fat intake of easily oil absorbing ingredients such as eggplants and potatoes by more than half.
Meat or starchy ingredients stir fried in high temperature and wide oil can easily form an oil coating, such as dry fried sausages, fried crispy meat, and other dishes that may have a single serving fat content exceeding one-third of the recommended daily intake. Reusing frying oil can produce trans fatty acids, and dishes that require secondary frying, such as stir fried pork and pork belly, have significantly increased levels of oxidized fat. Some restaurants add light oil or mixed animal oil to pursue taste, further increasing the proportion of saturated fatty acids.
For daily cooking, it is recommended to use non stick pans to reduce oil consumption, and prioritize oils with high unsaturated fatty acid content such as rapeseed oil and olive oil. When pairing meat and vegetables, blanch the meat in advance to remove fat, and blanch and stir fry root vegetables to reduce oil absorption. When dining out, it is recommended to use less oil or water to remove floating oil. People with high blood pressure and high blood lipids should avoid frequent consumption of pan fried dishes.
