Is it okay to wash pork with flour

Pork can be cleaned with flour, but a more scientific cleaning method should be chosen based on specific circumstances. The characteristic of flour adsorbing oil and impurities can assist in cleaning, but excessive kneading may damage the meat quality and cannot replace the sterilization effect of running water rinsing. When the surface of pork is contaminated with blood or oil, wrapping and rubbing it with dry flour can absorb some impurities, especially suitable for treating areas with more fat. The small particles of flour can remove dirt from the meat crevices. It is recommended to evenly sprinkle flour on the meat pieces and let them sit for a few minutes, then gently pat and shake off. This method has a certain effect on cleaning the surface of frozen meat after thawing, but attention should be paid to the possibility of residual starch in flour affecting the subsequent cooking taste.

If pork has obvious blood or requires deep cleaning, rinsing with running water combined with salt scrubbing is more effective. Flour cannot kill pathogenic microorganisms such as Salmonella, and high temperature cooking is still necessary when processing raw meat. For pre packaged cold fresh meat, excessive cleaning may actually increase the risk of cross contamination, and simple rinsing is sufficient. In special circumstances where meat products adhere to a large amount of dirt, they can be initially treated with flour and then rinsed with running water, but the kneading force should be controlled to avoid the meat becoming stale.

For daily processing of pork, it is recommended to prioritize rinsing with running water and lightly brush the surface with a soft bristled brush. After cleaning, use kitchen paper to absorb moisture in a timely manner to avoid bacterial growth. Pay attention to using the raw and cooked cutting boards separately, and ensure that the center temperature reaches 70 ℃ or above when cooking. If pork shows signs of spoilage such as mucus and odor, it should be discarded directly and not rely solely on flour for cleaning.
