How to fry rice tofu in a non stick pan

The key to a non stick pan for frying rice and tofu lies in controlling the oil temperature, using a non stick pan, or thoroughly moistening the pan. Before frying, the surface moisture of the rice tofu can be wiped dry, and slowly fried over low to medium heat to avoid frequent flipping. The selection and pre-treatment of cookware are important when frying rice tofu. The coating of a non stick pan can effectively reduce adhesion. If using a regular iron pan, it is necessary to first heat the empty pan until it emits slight smoke, pour in an appropriate amount of cooking oil, and rotate the pan to evenly cover the bottom of the pan, forming an oil film before adding rice tofu. Rice tofu itself has a high moisture content and is prone to sticking to the bottom when cooked directly. Kitchen paper can be used to absorb surface moisture or sprinkle a small amount of starch to absorb excess water vapor. Insufficient oil temperature can cause rice tofu to stick to the pot, while excessive oil temperature can easily cause it to burn. Heat the oil to 50-60% hot and add rice tofu. Fry over medium low heat until a golden crust forms at the bottom, then gently push with a spatula. During the frying process, do not rush to flip it over. You can gently shake the pan to observe if it sticks to the bottom. If flipping is required, a shovel can be used to test the edges and confirm the shape before flipping the whole. The fried rice tofu is crispy on the outside and tender on the inside, suitable for pairing with dipping sauce or as a side dish.

In daily cooking, thick slices of rice tofu can be cut to increase the heating area, and a little salt can be sprinkled before frying to help dehydrate. Pairing with spices such as ginger and garlic can enhance the flavor, but it is important to avoid adding acidic seasonings too early to avoid affecting the texture. When storing, be sure to soak uncooked rice tofu in clean water and refrigerate to prevent surface cracking from affecting subsequent processing.
