Freeze dried foods typically retain most of their nutritional components and are suitable as emergency or portable food. Freeze drying technology can effectively preserve nutrients such as protein, vitamins, and dietary fiber through low-temperature dehydration treatment, but some water-soluble vitamins may be slightly lost. During the processing of freeze-dried food, the ingredients are first rapidly frozen and then sublimated to remove moisture in a vacuum environment. This processing method can effectively avoid the damage of high temperature to nutrients, with almost no impact on protein and minerals, and dietary fiber can be fully preserved. For example, although the vitamin C content in freeze-dried fruits is slightly lower than that in fresh fruits, it is still higher than that in traditional dried foods. The preservation rate of high-quality protein and iron elements in freeze-dried meat can reach a high level, making it suitable for outdoor activities or special scenes to replenish energy. Some water-soluble vitamins such as vitamin B and vitamin C may be lost during pretreatment or rehydration, especially for ingredients with large exposed areas after cutting. Folic acid and vitamin K in freeze-dried vegetables are relatively stable, but prolonged exposure to light or improper storage can still lead to oxidative loss. Freeze dried foods packaged in nitrogen or stored away from light can further reduce nutrient loss. After rehydration, freeze-dried food has a taste similar to fresh ingredients, but it is not suitable to completely replace daily diet. Suggest pairing with fresh vegetables, fruits, whole grains, and high-quality protein sources to ensure a balanced nutrition. When storing, pay attention to sealing and avoiding light. After opening, consume as soon as possible to avoid moisture and spoilage. Special populations such as infants and young children or those with weak digestive function can choose freeze-dried foods with sufficient rehydration as complementary foods.
