Eggs are indeed more prone to spoilage after cleaning. The surface of eggs has a natural protective film that can block bacterial invasion. Cleaning can damage this film, making it easier for microorganisms to enter the interior through the eggshell pores. Unclean eggs can be stored for a longer time at room temperature, while washed eggs need to be refrigerated and have a shorter shelf life. The stratum corneum of egg shells is a natural antibacterial barrier composed of proteins and lipids secreted by the fallopian tubes of hens. This membrane can seal thousands of tiny pores on the eggshell, reducing water evaporation and preventing the invasion of pathogens such as Salmonella. Most commercially available clean eggs undergo professional disinfection treatment, but manual cleaning at home is difficult to achieve the same effect and instead increases the risk of contamination. If there is feces or soil on the surface of the egg, it can be lightly wiped with a dry soft cloth instead of washing with water. When cleaning is necessary in special circumstances, warm water should be used instead of cold water to avoid sudden temperature changes that may cause eggshell shrinkage and inhalation of pollutants. Immediately wipe dry and refrigerate after cleaning, and store with the blunt end facing upwards to maintain stability in the chamber. Damaged or washed eggs should be consumed first and avoid contact with other foods. Choosing eggs with clean and crack free surfaces when purchasing can reduce the need for cleaning and maintain a dry and ventilated storage environment.

It is recommended to refrigerate eggs for daily storage, with a temperature controlled at around 4 degrees Celsius to extend their shelf life. Avoid placing eggs on the refrigerator door rack to reduce the impact of temperature fluctuations. Before cooking, check if the eggshells are intact, and discard eggs that are loose or have a strange odor. Reasonably plan the purchase quantity, prioritize consuming eggs close to their expiration date, and consume them with vegetables and fruits rich in vitamin C to promote iron absorption.
